The results of a national study to determine the amount of salt and saturated fats in diets of Iranians, conducted by the National Nutrition and Food Technology Research Institute at Shahid Beheshti University of Medical Sciences, were released on Saturday. The results indicated that on average a person consumes 9.1 gram salt per day, with 54% of the total amount added to food during cooking process. Also, the consumption of non-hydrogenated oils has increased 5.5-fold compared to the last decade. “During a ten-day period, diets of people living in the capital cities of six provinces of West Azarbaijan, Fars, Khuzestan, Lorestan, Semnan and Khorasan Razavi were studied,” said Dr Hedayat Hosseini, head of the institute, IRNA reported.
