When it comes to low heat cooking, sesame, olive and fish oils are the best choices, says Atiye Razazi, nutrition expert and a board member of the Qazvin University of Medical Sciences. “It is recommended that people use oils which contain up to 5% trans fat,” Alef News Agency quoted her as saying. Prolonged diet containing foods with a high proportion of calories coming from lipids can cause many diseases including fatty liver. Fatty liver disease is a critical health problem among Iranians, threatening 70% of the population, and resulting in 2.5-3% of hepatitis cases, she added.
