Researchers at Iran Scientific and Industrial Research Organization have produced plant enzyme to process cheese with a kind of microscopic fungus.

“Processed cheese is usually produced by using animal and recombinant enzymes, which could pose health threats,” said project manager Mehrdad Azin, jamejamonline.ir reported.

One of the traditional methods in cheese production is using enzymes that exist in the stomach of ruminant animals. “The method is, however, unscientific and in most cases unhygienic,” he noted.

Recombinant enzymes are used to process cheese in some countries, but since their health benefits are not clear yet, Iranian dairy industries are not allowed to use them. “That is why we found a new alternative.”
