The amount of Vitamin C in citrus peels is twice more than in the fruit. The peel is also rich in Riboflavin, vitamin B6, calcium, magnesium and potassium. Orange peel also contains Flavonoids which has anti-cancer and anti-inflammatory properties. So, citrus zests can be used in salads or desserts.
