1st Lactic Butter Production Line Comes on Stream

Iran’s first-ever lactic butter production line with a production capacity of 7,000 tons a year was launched in Tehran on Thursday. More than $15 million have been invested in the project, Mehr News Agency reported.
According to Deputy Agriculture Minister Hassan Rokni, close to 90% of Iran’s domestic demand for butter are met by imports.
“Iranians consume about 60,000 tons of butter every year, some 50,000 tons of which are imported,” he was quoted as saying by IRNA.
Rokni said the government plans to become self-sufficient in butter production within the next 10 years through selective livestock breeding for increasing the fat content of milk.
Lactic butter is made from whole milk that has been fermented with lactic acid. It has a low moisture content and strong flavor.
It contains a culture that ferments prior to the churning. The culture ripens the butter to a specific maturity when it is then pasteurized again to stop the ripening process.
